1 pound lean ground beef
1 cup diced onion
1 cup diced bell pepper
1 cup fresh mushrooms (i use crimini)
3 cloves garlic
2tbsp italian seasoning
2 cans diced tomatoes
2 cups fat free mozzarella cheese
8 oz whole wheat lasagna noodles (1/2 package)


How Do I Make Paul's Healthier Lasagna?

Here is how you make Paul's Healthier Lasagna:

1) Dice up onion, bell peper, mushrooms and garlic.2) Add gound beef, seasoning and all diced veggies to skillet and cook over medium heat until meat is brown and veggies are well sauteed. Drain excess fat. Add diced tomatoes to skillet and simmer over low heat.3) Boil lasagna noodles per package directions. Drain noodles and rinse with cold water.4) in a 2 quart casserole dish, layer bottom with lasagna noodles. Scoop half of beef mixture over noodles. Sprinkle 3/4 cup of cheese over meat mixture. Add another layer of noodles, meat and cheese. Cover second layer with remaining noodles. Sprinkle reamining cheeses on top.5) Bake at 350 for 30 minutes or until cheese is melted and slightly brown on top. 6) Remove from oven and let sit 5 minutes.
