* *2 16 oz. cans plum tomatoes, pureed in blender
* *1 6 oz. can tomato paste
* *1/2 tsp. dried basil
* *1 cup grated Parmesan cheese
* *9 Lasagna noodles
* *2 cups fat cottage cheese, drained
* 16 oz. Part Skim Mozarella cheese, grated
1 1/2 cups baby spinach


How Do I Make Susan's Special Lasagna?

Here is how you make Susan's Special Lasagna:

Serves 8To make sauce:Heat oil in a 5 quart saucepan. Add onion and garlic and saute for about 3 minutes. Add chicken sausage and cook for 5 minutes, breaking it up with the edge of a spoon, until it looses pink color. Stir in 2 cups water and tomatoes, tomato paste, basil. Reduce heat to low and simmer for 1 hour, stirring occasionally. Set aside (sauce may be prepared in advance and refrigerated).Place oven rack in center position and preheat oven to 350 degrees.To make Lasagna:Spread one quarter of the sauce in the bottom of an 11 by 9 by 3 inch baking dish. Sprinkle with 1/4 of the Parmesan cheese. Place 3 of the uncooked noodles over the cheese (do not overlap; give them room to expand). Spread 1/3 of the cottage cheese, 1/3 of the mozzarella, and 1/3 of the baby spinach over the noodles. Repeat the layers 2 more times, ending with the remaining sauce and Parmesan cheese. cover with foil and bake for 35 minutes.
