2 cups stemmed and course lay chopped young spinach

5 lasagna noodles, boiled and cooled
1/4 cup no sugar added pasta sauce for bottom of baking dish.

Here is how you make Individual Lasagna Roll Ups:

Pre-heat oven to 400 degrees. Saut? veggies for tomato sauce in a non stick skillet adding stock or water as necessary to prevent sticking. (You can always use oil as well if you prefer.) Add tomato paste and spices and saut? until slightly browned. Add diced tomatoes and their juices and cook over medium heat until sauce thickens. Combine cheese filling ingredients and season to taste. Cover the bottom of an 8x8 glass baking dish with 1/4 pasta sauce. Spread cheese mixture evenly on pre-boiled lasagna noodles and roll up. Place them in the baking dish and top with sauce. Sprinkle shredded mozzarella on top if desired (not included in calorie count or recipe).
