A hearty winter minestrone that no broth. The original recipe called for pancetta but I don't eat pork so I subbed in turkey bacon. What Are The Ingredients For Winter Minestrone Recipe?The ingredients for Winter Minestrone are: 8 slices turkey bacon, chopped2 large red onions, chopped 4 celery ribs, chopped 2 medium carrots, chopped 1 tbs olive oil 6 garlic cloves, finely chopped 2 tbs tomato paste 1 (28 ounce) can whole tomatoes in juice 1 qt hot water 5 cups chopped, cored Savoy cabbage 5 cups chopped escarole 1 piece of Parmigian rind 1 (19 ounce) can cannellini beans, rinsed and drained salt and pepper Cooked pasta 1lb, like ditalini How Do I Make Winter Minestrone?Here is how you make Winter Minestrone: Cook bacon, onions, celery and carrots in oil in a 7 to 9 quart heavy pot (dutch oven type) over medium heat, stirring occassionally. Add swiss chard stems if you have them, save leaves for last 10 minutes of cooking.Add garlic, 1 tsp of salt, and 3/4 tsp of pepper and continue cooking, stirring occasionally, until vegetables are tender, don't let them burn to the bottom though, for 45 minutes.Push vegetables to side of pot. Add tomato paste to cleared area and cook, stirring constantly, for 2 minutes, but don't let it burn. Stir paste into vegetables and cook, stirring constantly for 2 more minutes.Stir in tomatoes and their juices, breaking them up with a spoon, then add hot water, scrape up brown bits from the bottom of the pan.Bring pot to a simmer. Stir in cabbage, escarole, and parmesan rind. Simmer, covered, until greens are tender, 40 minutes.Stif in chopped chard leaves if you have them. Add beans, simmer, partially covered, 10 minutes. Discard rind. Season with salt and pepper to taste.
