Here is how you make Mushroom Polenta:

Saute onion in oil, then add garlic and cook for about 30 seconds. Add mushrooms and cook together for 3 minutes. Add stock and water, and bring to a boil. Slowly add corn meal and whisk until well blended. Bring to a simmer and cook for 10 minutes or until thickened, stirring constantly. Serve as is, or pour into an 11x9 pan and spread evenly.
