3 tablespoons chopped fine ham - preferably Prociutto or Pancetta, but can be left over pork shoulder, sliced ham, bacon - etc. for the taste
1 tablespoon olive oil
4 lbs pot roast
3 large onions chopped
1.5 cup celery chopped fine
2 cups baby carrots
6 tablespoons chopped garlic
Black pepper, freshly ground from mill to taste
1 cup sherry
2 cups red wine
2 tablespoons basil
1 tablespoon crumbled bay leaf
4 tablespoons flour
salt to taste (but remember the salt that will come from the pork, depending on what you've used)

Crock pot or heavy bottomed pot with tight fitting lid that can go into the oven.

Here is how you make Pot Roast, Wine and Onion:

Allow 6 hours for prep and cook time.Brown the pork in the tablespoon or so of olive oil. Add onion, carrots, celery, sherry, wine, garlic, basil, bay leaf and pepper. Follow your instructions on the crock pot for cooking, or place in the oven for 4-6 hours at 350. Check after 2 hours and turn the roast. If the wine has evaporated, you can add water. Meat is done when it feels tender and pulls apart fairly easily. When it is done, test for salt balance - it could need a tablespoon to nothing depending on the pork and your tastes. Gradually sprinkle the flour into the sauce to thicken - using 4 or so tablespoons until it is the desired thickness.Also, if you should forget to check it and it should become very dry, the roast can usually be saved by adding water and letting it cook at 200 for 20-30 mins. Serve with salad and potatoes and/or crusty french bread.Makes 6 servings.
