cook spaghetti squash in oven until tender. Scoop out with a fork and drain. Place 1 Tbls olive oil in pan and add 1 Tbls minced garlic. Cook over med. heat until sizzling and fragrant. Add shredded sweet potato (spaghetti like spirals) and julienne red peppers , and diced tomato. add 1/2 cup water. Cover and cook for approx. 5 min. Add 2 tbs each of fresh snipped parsley and fresh basil. Add drained spaghetti squash and stir gently. Sprinkle fets cheese over top.
