1 small onion - diced
2 cloves garlic - diced
1 lb Jumbo Shrimp - raw, peeled, and deveined
.25 C dry white wine
2 - 3 T fresh parsley
2 T fresh basil
2 - 3 t fresh thyme
Juice and zest of one lemon
up to 1 C pasta water
salt and pepper to taste

Here is how you make Lemon and Herb Shrimp Pasta:

Peel and devein shrimp. Rinse and pat dry. Set aside.Boil linguine in salted water, about 8-9 minutes.Meanwhile, Saute onion in oil. Med-low heat for 3 minutes.Add minced garlic and sautee for 2 minutes.Add shrimp and saute until near done (about 4 minutes)Add wine, lemon juice and zest.Add herbs, salt and pepper.Add pasta water to thicken sauce (up to one cup)Toss in linguine until fully coated with sauce.Serve with grated parmesean cheese and lemon wedges (not included in Nutritional Information) Makes 8 servings.Number of Servings: 8Recipe submitted by SparkPeople user TRISHSHAW.
