1 1/2 tsp. olive oil
3 Jenni-O Lean Italian turkey sausage links, casings removed
1 cup chopped onion
1 cup (5 1/2 oz.) yellow bell pepper
1 1/2 cups chopped mushrooms
2 cloves garlic, minced
2 tsp Italian seasoning (Pillitari's)
1 28 oz. can no salt added plum tomatoes
2 cups beet greens, chopped

3 Tbsp. shredded Parmesan cheese

Here is how you make Gerri's Sausage and Veggie Pasta:

Cook pasta according to package directions omitting salt.In a large dutch oven heat the olive oil then add the sausage, cook stirring to crumble till no longer pink. Remove sausage from pan with slotted spoon and reserve.Add onion to pan and cook in residual fat till softened, 3 minutes. Add the pepper and cook till softened, 3-4 minutes. Add garlic and cook 30 seconds then add mushrooms, stir to combine and cover. Cook about 5 minutes, remove cover and cook till mushroom liquid has been absorbed.Add tomatoes with juice and Italian seasoning, Break up tomatoes with back of spoon.
