How Do I Make Pineapple Calzone?

Here is how you make Pineapple Calzone:

1. Preheat oven to 400 degrees F. Allow thawed dough to sit in room temperature for 10-15 minutes before starting.2. Spread flour on work surface before putting down pizza dough (this prevents the dough from sticking). Note: applying some flour to your rolling pin also helps prevent the dough from sticking.3. Roll out dough into a 1/2 in - 1/4 in thick circular shape.4. Combine Ricotta cheese and egg white in a mixing bowl. Add Mozzarella and pineapple chunks. Stir enough to combine all ingredienets.5. Add the cheese and pineapple mix to the lower half of the circle keeping about a 1/4 in distance between the pizza edge and the mixture. Fold top half of pizza dough over to meet the bottom half, covering the cheese mixture.6. Using a fork, press down the edges of the pizza dough to ensure that the calzone is completely closed to prevent any cheese from leaking out. 7. Brush the outside of the calzone with the olive oil and place into oven for 20-25 minutes or until the outside appears golden-brown.8. For added flavor, brush the outside of the calzone with olive oil once more after removing it from the oven. Note: Before baking, you can substitute an egg white for the olive oil when coating the outside of the calzone. The olive oil gives it a crisp and brown outside whereas the egg white will give it a softer coat.
