Turn oven off after ten minutes.Place one cup of lukewarm water in a small bowl. Add the yeast and then the sugar and stir it well. This will get the yeast going. In the bowl of a stand mixer, add the white and the whole wheat flour, then the salt and the olive oil. The yeast and water should look foamy after sitting for around five minutes. Pour this into the flour mixture and, using the mixer's dough hook attachment, turn on lowest setting. Use a spatula if needed to scrape down the sides so the flour starts coming together. Turn the mixer to the second lowest setting and when the flour is mostly absorbed to the third and let the dough mix for ten minutes. Place a few tablespoons of the reserved quarter cup of whole wheat flour into a large bowl. Remove the dough from the mixer. It should be fairly smooth and elastic to the touch. Knead the dough a few times and form it into a ball. Turn it over in the prepared bowl so it's cover with the flour. Cover the bowl with cling wrap and place in oven. Let the dough rise for 45 minutes. Try not to open the oven often. You want it slightly warm in there. Remove dough and punch it down, knead a few times and form into a ball again. If the dough feels too sticky, sprinkle some more of the reserved flour on it. Recover and return the dough to the oven for a second rise of twenty minutes. Remove the dough and set the oven to preheat to 450F.Punch down the dough, knead it a few times and separate it into two equal sized pieces. Sprinkle some of the reserved flour on your rolling surface and on your rolling pin. Pat the dough into a circle and roll the dough to about 1/8 inch thick (about like a pie crust) and as big as you need it. I make my pizza on something called a pizza screen, about 15 inch circumference. Put your choice of toppings on the pie and bake for 12.5 minutes. Remove, cut into eight pieces and serve immediately.
