4 boneless skinless chicken breasts, thin-sliced (I used Perdue Fit & Easy, but any will work)
Italian seasoning to taste
3 cloves garlic, minced
1 can tomato sauce (15 oz)
1 teaspoon Italian seasoning (yes, more!)
1/2 teaspoon cayenne pepper (adjust as desired)
1 bay leaf
1 can chickpeas (15 oz), rinsed and drained


How Do I Make Pollo e Ceci Piccanti?

Here is how you make Pollo e Ceci Piccanti:

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Season both sides of the chicken filets with some salt, pepper, and Italian seasoning (as much or as little as you like). Brown the chicken on both sides, about 1-2 minutes per side - the thin-sliced filets cook quickly! When the chicken is browned, remove it from the pan and set it aside. Add the garlic to the hot pan and stir until fragrant, about 1 minute. Add the tomato sauce, 1 more teaspoon of your Italian seasoning, 1/2 teaspoon of cayenne pepper (this will be fairly spicy so you may want to use less), and 1 bay leaf to the pan. Stir until thoroughly combined. Add the chicken to the pan and reduce the heat to medium-low. Simmer for about 10 minutes. Add the chickpeas and simmer for an additional 2-3 minutes until thoroughly heated. Remove the bay leaf and serve over pasta. Makes 4 servings.
