2 wedges Light Laughing Cow cheese
3/4 oz white cheese (mozzarella/parmesan or the like)
1-1/2 cup skim milk
3 cloves minced garlic
1/2 cup chopped onions
1/2 cup chopped mushrooms
Pepper, salt, & herbs to taste

Here is how you make Fallon's Lightish Alfredo Sauce:

Melt butter over medium heat in a saucepan; saute the garlic in it. Add milk and allow to cool slightly, then put in blender with the Laughing Cow cheese and blend til smooth. Place back in saucepan and add flour, heat until simmering and add the white cheese, onions, and mushrooms.
