Chop onion and capsicum.Heat oil in non-stick frying panAdd garlic, fry 1 minute on high.Add onion and capsicum, fry for 5 minutes until soft.Add tomatoes reduce heat to low and simmer until sauce thickens.Add fresh basil at the last minute or dried basil with the tomatoes.This is a quick and easy sauce/topping to put on schnitzels or grilled chicken breast (add cheese and grill).
