* 1 lb extra lean ground turkey
* 2 Tablespoons fennel seed
* 1/2 cup chopped onions
* 2 Italian cherry peppers (or other spicy peppers, to taste)
* 3 cloves garlic
* 2 tsp Olive oil (separate teaspoons)
* 1 egg white or equivalent in egg substitute
salt and pepper, to taste.


How Do I Make Lean Italian Sausage?

Here is how you make Lean Italian Sausage:

Put the ground turkey in a large mixing bowl.1. ROAST THE GARLIC. Place a skillet over high heat. Do NOT oil the pan. add the three garlic cloves, still in their papery skins. Roast the garlic for three to five minutes or until it is fragrant with black spots on the skin, turning halfway through. Remove sthe garlic cloves.2. TOAST THE FENNEL SEEDS. Be prepared to move quickly. Add the fennel seeds to the hot skillet. As soon as they begin to brown, remove them from the heat and from the pan. Add the toasted seeds to the ground turkey. 3. Chop the pepper into a fine dice. If you want a hotter sausage, keep the seeds in. Add the pepper to the turkey.4. Put one teaspoon of oil in the skillet. Saute the onions until translucent. Remove onions and add to the turkey.5. Add egg white, salt and pepper. Mix well (by hand is best, but a spoon will do.) 6. Your sausage can be formed any way you like - patties, meatballs, or cook all together as crumbles. Heat 1 teaspoon oil in the skillet. Shape sausage as desired and add to pan, cooking until brown all the way through, about 7 to 12 minutes, depending on the thickness of the shape. Turn and move to avoid sticking.Make 5-6 servings. A serving is 3 oz. cooked, or approximately 1/2 cup.Serve with pasta and sauce, on a roll with peppers and onions, or with an egg on an english muffin for a fun breakfast sandwich.
