1 tsp dried tarragon
1/2 c. white wine
4 c. low sodium chicken broth
6 oz. baby spinach

Here is how you make Sausage and Bean Soup:

1. Heat 1/2 tbsp of olive oil in a dutch oven over medium high heat. Saute sausage links for 10-12 minutes. Transfer to a cutting board and let rest 5 minutes before slicing on bias.2. Wipe out pot and add remaining 1/2 tbsp of olive oil. Add carrot, onion, crushed pepper flakes, rosemary, salt and pepper. Cook 8-10 minutes.3. Add beans and wine and simmer for 5 minutes.4. Fold in sliced sausage and tarragon. Simmer for 3 minutes.5. Add chicken broth and being to a simmer. Add spinach and cook until wilted.
