1tablespoon olive oil
2-3 cloves garlic, chopped
1/2 chopped onions
Italian seasoning
Cayenne Pepper
1 20 oz package 93% lean ground turkey
half a bell pepper, diced
1 small zucchini, diced
1/2 c mushrooms, diced
3 Chinese Eggplant, 10-12" long, hollowed into "boats" and the insides chopped up small
Salt & Pepper to taste


How Do I Make Stuffed Chinese Eggplant?

Here is how you make Stuffed Chinese Eggplant:

Saute garlic & onions in oil with seasonings until onions start to turn translucent and herbs are fragrant. Add turkey and let cook until about half the pink is gone. Add chopped vegetables and stir to break up the turkey. Continue cooking until veggies are crisp-tender and meat is cooked through. Lay eggplant boats out on a tray and fill each boat with 1/6 of meat/veggie mixture. Bake at 350 until eggplants are soft, about 15-20 minutes depending on how thin you carved out your shells.
