1 large onion
1 tbsp olive oil
Sage, 1tsp dry
1 medium eggplant
4 rustic turkey sausages, ~100g each
200ml red wine, a nice one
100g passata
300ml vegetable broth, I like to use broth made for cooking pasta
100g dry pasta, smaller shapes or spaghetti work well


How Do I Make Turkey Sausage and Eggplant Pasta Supper?

Here is how you make Turkey Sausage and Eggplant Pasta Supper:

Chop the onion finely and, using a suitable-sized saucepan, saute in olive oil on a low heat,together with the sage, until the onion turns golden. Cut the eggplant into small cubes and add to the onion mixture, sauteing for about 10mins on a medium heat until the eggplant begins to soften and brown.Remove the vegetables from the pan and place on a plate.Remove the casing from the sausage and add to the hot pan in small knobs, like small meatballs. I just squeeze them straight in. Cook on a medium heat, no added oil needed, until the sausage begins to hold its form and colour at the edges. Deglaze the pan with an occasional splash of water if the sausage starts to stick.Add the wine to the pan and simmer gently until it thickens and little liquid remains in the pan.Add the passata, vegetable broth and eggplant mixture to the pot and bring up to a simmer. Don't worry if it looks a bit soupy at this stage, the pasta will absorb a fair amount of the liquid as it cooks.Throw in the dry pasta, stir and simmer, covered, until the pasta is cooked to your liking.Serving Size: 3 generous portionsNumber of Servings: 3Recipe submitted by SparkPeople user PIXIEWIXIE.
