Prepare a standard meat sauce using the tomato sauce, paste, and chopped vegetables. I add wine and herbs for flavor. Make sauce on the thick side, as the noodles will render some liquid.Slice the yellow and zucchini squashes evenly, using a mandoline if available, down the long end of the squash.
