Combine flours and baking soda in large bowl. Separate eggs - beat egg whites until stiff peaks form and set aside. Combine egg yolks and honey. Add to flour mixture. Add buttermilk and stir until well combined. Fold in egg whites.Spoon scant 1/4c batter per pancake - cook over medium heat until tops are covered in bubbles.
