Boil celery for 3 min. then add yams for additional 2 min (w. celery still cooking). {SALT WATER FOR BOILING}Drain & put on a cookie sheet to cool for 15 min.Meanwhile-saute onions 1 TBSP of EVOO (olive oil)(make sure pot is big enough for all ingredients)Once onions are clear/translucent add the yams, apples & celery to the pot. Add parsley, salt & pepper-mix up & push in a flat layer. Cook for 10 min. -15(turning/mixing the veggies every 2 min.) until start to caramelize or get soft (yams).Add sage Put in bowl & add salt & pepper if desired to taste. Server warm.
