1 cup baby spinach

2 (15 oz) cans black beans, drained and rinsed
2 cups red enchilada sauce
1 cup shredded Mexican cheese blend
Optional toppings: Chopped green onions, avocado slices, or sour cream

1. Preheat the oven to 350 degrees F. Grease a 9x13 baking dish with grapeseed oil and set aside.2. Add quinoa and water to a medium saucepan and bring to a rolling boil.
