While the gelatin cools a bit, blend or process the blue cheese, parsley, and both milks until very smooth. Place in mixing bowl and whisk in the gelatin. Divide the mixture in cups or pour in ring mold. Cover and chill 2 to 3 hours to overnight. Unmould onto lettuce leaf and garnish with tomatoes.
