Debone chicken. Place chicken pieces in food processor and pulse 10-12 times. Chicken will be finely minced. In a large bowl, combine chicken, cranberries, apricots, celery, apple (if desired), almonds, cilantro, yogurt, salt and pepper. Stir to combine. Taste for seasoning.
