Here is how you make HealthierJo's Chicken Salad:

Rinse chicken breast in cold water. Cut into 3 or 4 pieces and place in microwave-safe dish with lid. Add a tiny bit of water to chicken and microwave (covered) on high for 3 minutes. Turn chicken and microwave for another 3 minutes or until chicken is thoroughly cooked (no pink).Cool slightly and shred into a bowl. Add all ingredients except for apple, mixing well.
