- Boil chicken in a pot of water until white and cooked through- Remove from water, and cut/shred until the consistency you want - like tuna salad, for instance.- Mix with 1-2 tbsp light mayo, as much as necessary for your desired chicken salad (calculated on 2 tbsp)- Add the chopped onions (chives or scallions, whatever floats your boat!), mix- Season to taste! Sometimes I'll add in a bit of garlic salt to give it a little kick.- Serve on whole wheat bread of your choosing.
