Bring 12 C. of water to rapid boil, with the chicken thighs in water, allow to slow boil for 1 hour. Don't let the pot boil over. Remove the thighs, skim the foam, discard. I would rather strain into a clean pot. Put pot back on to slow simmer, in the mean time, remove skin and bones from legs, chop meat and return to pot. As this is simmering, chop the carrots and add. Chop celery and onions, add, add your spices. I like rosemary and parsley but any that you like is fine.
