Put potato cubes in microwave for 10 mins. or until soft, not mushy.2. Cook or warm up chicken breast. 3. Coat skillet with spray oil. On medium heat add onions, mushrooms, oregeno, thyme, celery seed (add as much seasoning as you like.)4. After 2 mins. add soft potatoes, bell peppers, zucchini, squash, and cooked meat. (In that order.) 5. Add the pepper, lemon pepper salt and all-seasoning. Stir until well coated. Cover and stir often, spray with cooking spray when needed. 6. Take off heat when squash and zucchini are soft or cooked to your liking.Makes 4, 1-cup servings. Approx. 210 cal., 1 fat, 31.25 Carb., 22.25 protein for 1 serving of the main dish. Half of this for the side dish.
