1 lb Ground Chicken
2 cup Zucchini, grated & pressed dry between paper/kitchen towels
2 stalks Green Onion, chopped/minced
4 Tbsp Cilantro, chopped/minced
1 clove Garlic, minced
1/2 tsp Pepper, black
3/4 tsp Cumin (optional, but I included for that Tex Mex flavor)
1 large Egg
1/2 cup Panko Bread Crumbs

Here is how you make Chicken Zucchini Poppers (modified from One Lovely Life):

Preheat oven to 400F. Drizzle a very small amount of olive or avocado oil and wipe down non-stick/foil-lined baking sheet with oil. In large bowl, mix together all ingredients. Mixture will be fairly wet. Scoop meatballs with a rounded Tablespoon (or a cookie scoop also works well) and gently smooth/shape with your hands. I got 34 poppers on my first recipe attempt but a few were more heaping than others so I think 36 poppers is entirely reasonable. Bake at 400 F for 10 minutes, flip poppers over so they brown evenly, and cook an addition 10-15 minutes until cooked all the way through.Serving Size: Makes 6 servings of 5-6 poppers eachNumber of Servings: 6Recipe submitted by SparkPeople user AMBAM1881.
