2 tbs. potato flour
1 c stock
4 cups water
grated onion

Wash fresh spinach and cook in 1 cup of water until just tender about 8-10 minutes, stirring occasionally. Blend in electric blender until coarsely ground, not pureed.Make a white sauce by combining skim milk powder, potato or brown rice flour, stock, and 4 cups of water using a whisk. Then cook in double boiler, over hot water until thick.Add spinach mixture to white sauce, then add grated onion and salt and pepper to taste.
