1 cup fresh spinach, chopped
1/4 cup onion, chopped
1/2 cup fat free half and half
1 cup artichoke hearts, canned or frozen
4 TB light chive and onion cream cheese, softened
2 cloves of garlic, pressed or minced
1/2 cup mushrooms, cooked
1/2 tsp pepper
1/4 tsp of salt
1 TB fresh parsley, minced
4 sheets phyllo dough
cooking spray
2 TB grated parmesean or romano cheese

Here is how you make Spinach Artichoke Quiche with Phyllo Crust:

Preheat oven to 350 degrees.In a large mixing bowl combine egg sub, onion, artichokes, mushrooms, parsley, garlic, salt and pepper, and half and half. In a smaller bowl whisk a 1/2 cup of batter with softened cream cheese. Then incorporate with the rest of the batter. This will make sure you don't have lumps of cream cheese in your quiche, which well may not be a bad thing. Stir in feta cheese.Working with phyllo is a bit tricky at first but really it's pretty forgiving unless you dry it out. If it tears a bit, it's okay. Make sure you work quickly and with one sheet at a time. The sheets I'm not using I roll up in the plastic it comes in and cover with a damp towel. Working with one sheet at a time, spray each sheet with cooking spray on both sides. Just a light spray will do but make sure there are no dry spots. Layer sheets in opposite directions in a deep dish pie plate. The dough will hang over the edges. After placing 4 sheets, roll the overhanging dough so it fits into the pie plate.
