1 cup quinoa, dry
2 cups frozen edamame
2 cloves garlic, sliced thin
2 cups baby spinach
1.5 oz feta cheese (more or less - I didn't want to underestimate the calories, but I know it was less than 1/4 cup)
Sea salt, to taste
Any other seasonings to taste (I used freshly ground black pepper and garlic powder)

Here is how you make Quinoa with Steamed Edamame and Spinach:

- Rinse quinoa and soak for a while if you have the time - I only had about 30 minutes, but some people recommend an hour or more.- Cook quinoa according to package directions - I used a rice cooker - 2 cups of water to 1 cup quinoa, cooked for about 26 minutes, would do more like 20 next time, some of it cooked to the bottom.- Meanwhile (or as you get closer to the quinoa being done), heat olive oil in a large high-sided skillet over medium heat. When oil is hot, add garlic and sautee for a couple of minutes. Add baby spinach (I coarsely chopped it) and sautee to your desired amount of wilt-age. Cover and keep warm until quinoa and edamame are done.- When the quinoa has about 6 minutes left, steam edamame - I usually just dump it into the steamer basket over boiling water on the stove to thaw for 5 minutes, but it's up to you what you choose.- Combine all ingredients in the pan and mix together thoroughly. Add feta cheese, stir, and enjoy! Season to taste with salt, pepper, etc.For the record, I might add more spinach next time - eyeball it, and add as much as you would like.Makes approximately four 1-cup servings.
