The ingredients for Bean Tortilla Casserole are:

1.75 cup Cheddar Cheese - shredded (fat-free or low-fat is preferable)
1 pound extra-lean ground turkey
1 onion, diced
1 15 oz. can pork and beans (any brand, my favorite is Van Camp's)
4 corn tortillas
salt and pepper to taste


How Do I Make Bean Tortilla Casserole?

Here is how you make Bean Tortilla Casserole:

Add ground turkey, onion, salt and pepper to skillet and brown. Once browned, add pork and beans. Mix together. In a separate casserole dish (2 quarts or larger), begin to layer the cheese and two tortillas any way you like (sometimes I cut up the toritillas into little squares and add to the mix in the skillet). Once first layer is placed, add a layer of turkey and bean mixture. Keep layering until all ingredients are used. For best flavor, l top last layer with cheese.
