1.75 cup Black Beans (1 can, drained & rinsed)

Here is how you make Sweet Potato and Black Bean Bowl:

1) Bake the sweet potato (can also use a leftover potato) or peel and cube a raw sweet potato and roast on baking pan.2) Add oil, onion, bell pepper, and minced garlic to a large skillet on medium heat, Saut? for about 5-10 minutes, stirring as needed.3) Stir in salt, cumin, and pepper. Then add beans and cooked rice. 4) Saut? for another 5 minutes. 5) Add roasted sweet potato to the pan and stir well.
