1 Lemon, freshly squeezed
1t. Extra Virgin Olive Oil
1 Can Bushes Black Beans, Reduced Sodium
(rinsed well under cold water)
1C. Dry Ancient Harvest?s Quinoa, cooked and cooled
2 Cloves Garlic, pressed
1 Red Jalape?o, seeded and chopped (optional)

Here is how you make Black Bean Quinoa:

Cook the quinoa in water, cool. Rinse beans really well under cold water, drain. Remove corn from cob. Add the chopped cilantro, corn, rinsed beans, chopped red onion, cayenne pepper, diced avocado, and garlic to a large bowl. Drizzle with oil and half of the lemon juice. Gently toss. Add the cooled quinoa and feta, then gently toss. Refrigerate for at least 2 hours to allow flavors to meld. Squeeze the remaining half of the lemon over salad before serving.
