Here is how you make Quinoa and Black Beans:

Make 2 cups dry quinoa with 1 jar Trader Joe's authentic salsa with appropriate liquids. (2 cups liquid to one cup rice.) Add in 1 Tbsp olive oil. Let cook for required time. (may take up to two hours.)When quinoa is finished, chop 1 pepper, 1 onion, 4 carrots, bunch of broccoli and saute veggies with 1 Tbsp olive oil. Drain beans and mix in with veggies. Mix cooked quinoa in with veggies and beans.Garnish with plain greek yogurt and cilantro (if desired.) Number of Servings: 8
