4 Servings Spicy Nacho Tortilla Chips

Here is how you make Julie's Moose Mexican Casserole:

Cook Rice according to package directions using the can of diecd tomatoes and chilies, water & butter. Simmer for 25 minutes. Meanwhile, Chop onion, Bell Pepper & Jalapeno. Brown Ground Moose, add onion, green pepper & Jalapeno - cook till veggies are almost done. Preheat oven to 350 degrees. Add diced tomatoes, corn, black beans, taco mix, & chili powder. Simmer till rice is done. Pour Rice mixture into meat mixture and combine. Pour into 9x13 baking dish. Top with chips & shredded cheese. Bake until cheese is melted, about 10 to 15 minutes.
