This was an old recipe off of a Herr's Tortilla Chip bag (a childhood favorite of my husband's) that we have updated and made more healthy. We use Trader Joe's Salted Tortilla Chips that have 4 grams of fiber per serving, 93% lean Ground Turkey, 1% Cottage Cheese (could even use fat free if you liked), and 2% shredded Mexican Cheese. What Are The Ingredients For Eldorado Taco Casserole Recipe?The ingredients for Eldorado Taco Casserole are: 1 poune Lean Ground Turkey (93%)1/2 cup Fresh Onion, chopped (about 1/2 a large onion) 1 teaspoon Chili Powder 1 teaspoon Cumin 8 oz can Tomato Sauce 1 cup Salsa (we use Medium) 24 oz container 1% Lowfat Cottage Cheese 7 oz can Green Chilies 1/4 teaspoon Black Pepper, freshly ground 12 oz Tortilla Chips, crushed (about 2.5 to 3 cups) 6 oz Mexican Shredded Cheese (2% Lowfat - about 1.5 cups) How Do I Make Eldorado Taco Casserole?Here is how you make Eldorado Taco Casserole: Lightly spray two glass or ceramic pie plates with Cooking Spray. Using a rolling pin, crush Tortilla Chips into small pieces. (Placing chips in a large ziploc bag while crushing helps keep things neat) Divide crushed chips evenly between the two pie plates.Coat a large skillet lightly with Cooking Spray. Brown Ground Turkey, chopping as it browns. Add chopped Onion to skillet and cook until translucent. Add Tomato Sauce and Salsa, stirring well. Bring to a boil; reduce heat and simmer for about 10 minutes.Preheat oven to 400 degrees.Meanwhile, place Cottage Cheese in a food processor and pulse to a creamy consistency. Add Black Pepper and process to incorporate. Transfer Cottage Cheese to a medium mixing bowl. Fold Green Chilies into Cottage Cheese with a spatula. Divide mixture between the two pie plates, spreading to evenly cover the crushed tortilla chips.Remove turkey mixture from heat. Divide between the two pie plates, spreading to evenly cover the cottage cheese.Top both pie plates with even amounts of shredded Mexican Cheese.Place in oven and bake for about 30 minutes or until cheese bubbly. Allow to cool for 10 minutes before serving.Wonderful served with a crisp green salad.
