-1 Can Member's Mark (Sam's brand) All Natural Premium Chuck Chicken Breast (130z) OR 2 Chicken Breasts, boiled and shredded
-One brick reduced fat cream cheese
-1/2 cup shredded cheese (CheddarJack or your choice)
-1 can Old El Paso chopped green chiles
-1 can Old El Paso Green Chile Enchilada Sauce


How Do I Make SO Easy Chicken Enchiladas?

Here is how you make SO Easy Chicken Enchiladas:

Spray a square Pyrex (glass) casserole dish (8x8 or 9x9) with Pam and preheat oven to 350 degrees. In a mixing bowl add drained chicken and shred with a fork (or boiled chicken, shredded), then add cream cheese and chiles and mix until blended. Pour a small amount of the the enchilada sauce in the bottom of the baking dish (just enough to coat the bottom). The fill 6 whole wheat medium size tortillas with filling mixture and roll and place in baking dish seam side down. Pour remaining sauce over the enchiladas making sure that all parts of the tortillas are covered. Bake for 20 minutes or until sauce is bubbling and they are hot in the middle. (I usually pull them out half way through and make sure that all parts are still covered in sauce so that they get good and soft). Sprinkle cheese on top and put back in oven 5 minutes or until the cheese is melted. Makes six enchiladas (they are pretty filling so 1 is enough for me). I serve them with my Healthier Spanish rice which I will put in Spark Recipes. Once you've made this meal once you will want it all the time. It's so good and so simple to make.
