1 jar canned chicken or 2 chicken breasts, boneless, skinless
1 c. salsa
1 cup chopped onion
1 large red pepper, chopped
3 tomatoes, chopped
2-3 jalapenos, diced (depends on how spicy you like it)
4 garlic cloves, minced
1 tsp. salt
6 whole wheat tortillas
1 c. shredded colby jack cheese
1 T. olive oil

Here is how you make Tasty Chicken Quesadillas:

Makes six quesadillas1. Saute onions, garlic and peppers in olive oil until almost translucent. Add tomatoes, jalapenos, salt and chicken. Pour in salsa and let simmer until salsa has almost simmered down completely. 2. Meanwhile, grate cheese and sprinkle on each tortilla. Spoon 1/2 cup of chicken mixture onto tortilla and fold in half. 3. Cook in oven on baking sheet for 10 minutes, or until cheese has melted on inside. 4. Serve with sour cream, if desired.
