in a medium pot add the oil, peppers and ground turkey. cook until turkey is no longer pink. if desired drain meet & pepper mixture. add the can of soup, diced tomatoes, and can of beans. let simmer on low heat for about 2 hours, stirring often. This batch makes about 8 1cup servings. This recipe can be doubled easily and as an added treat it can be topped with shredded or chunked cheese.
