1 tsp salt
1/2 tsp black pepper, coarsely ground
3 large eggs, separated

Here is how you make Jalapeno Corn Pudding:

Preheat oven to 350F. Saute onion, corn, jalapeno, and garlic in butter over medium heat until soft, approximately 4 minutes. Stir in cornmeal. Add almond milk; stir until a thick batter forms, ~2 minutes. Transfer to a large bowl; add red peppers, green onions, cilantro, salt, and black pepper. Let stand 15 minutes, then stir in egg yolks. Separately, beat egg whites until stiff peaks form; fold into batter. Transfer to greased 9 x 9" baking dish; top with shredded cheese.
