Rotel Diced Tomatoes & Green Chilies - 1 can
Pace Chunky Salsa - Mild, 4 tbsp
Green or Red Bell Peppers - 2 cup, chopped
Yellow Sweet Corn, Canned, 1 cup
Pepper Jack Cheese shredded, 1 cup
Onions, raw, 0.5 cup, chopped
Old el Paso Refried Beans - Fat Free, 2/3 cup
1/4 cup green onions

Here is how you make Easy Southwest Vegetarian Lasagna:

1. Spray a 9"x9" glass baking dish with Pam and preheat oven to 400. 2. Mix together 2 tbs of the salsa and Rotel tomatoes. 3. Mix together the corn and peppers. 4. Lay a tortilla in the bottom of the dish (I usually trim the edges to make them square) and spread 1/2 the refried beans on top. Top with 1/2 the black beans, then 1/2 the corn/peppers, then 1/2 the salsa mix. Sprinkle with 1/2 the cheese. 5. Repeat the layer again starting with the tortilla.6. Add the last tortilla to the top and spread the remaining 2 tbs of salsa on top.7. Cover with tin foil and bake for 30 min. Uncover and bake an additional 15 min until top is golden brown.
