2 1/2 cups salsa (Aldi medium)
1 can (15oz) black beans (Aldi Dakota)
1/4 light italian salad dressing (Aldi Fit/Active)
2 TBSP taco seasoning
1/2 tsp cumin
6 flour tortillas (Benita Small Fajita size / Aldi)
3/4 cup light sour cream (Aldi)
2 cups reduced fat Mexican shredded cheese (Aldi)
2 TBSP dried cilantro


How Do I Make Enchilada Casser-Ole?

Here is how you make Enchilada Casser-Ole:

Brown hamburger with onion until browned. Add 1 & 1/2 cup of the salsa, black beans (rinced & drained), italian dressing, taco seasoning, and cumin. Set aside. Spray 2qt casserole with cooking spray. Cover bottom of pan with 1/2 cup salsa. Cut tortillas in 1/2. Line salsa covered bottom with 3 of the tortillas. Spread 1/2 the hamburger mixture over tortillas. Dollup 1/4 + 1/8 cup of sour cream over meat mixture, and spread around evenly. Top with 1 cup of cheese. Repeat layers. Top with 2 TBSP cilantro & chopped green onions.
