What Are The Ingredients For Mom's Enchiladas Recipe?The ingredients for Mom's Enchiladas are: 1 lb. lean ground beef (or ground turkey)1/2 cup green pepper, chopped 1 8-oz. can tomato sauce (no salt added) 1 cup kidney beans, drained and rinsed 8 6-inch flour tortillas (fajita size) 1/2 lb. Mexican Velveeta cheese (mild) How Do I Make Mom's Enchiladas?Here is how you make Mom's Enchiladas: Cook meat in skillet until meat until browned, drain off fat.Add tomato sauce and green peppers.Cook on medium heat for 5 minutes. Add drained kidney beans (or red beans) and 1/4 lb. cheese. Cook until cheese melts.Put 2 - 3 flour tortillas in microwave at a time and heat for 10 - 15 seconds to soften.Fill each with 1/4 cup meat mixture. Spread in 1 inch strip across middle of tortilla.Roll up and place seam side down in baking dish.Top with remaining meat mixture. Cover with foil and bake at 350 for 20 minutes.Top with remaining 1/4 lb. cheese and bake uncovered until cheese melts.Top with chopped tomato when serving.
