Grilled Rellenos are much healthier than the traditional fried ones. This can also be done in an oven. I came up with this recipe after trying so many at restaurants and not being impressed so I decided to make my own. Lay them on a bed of lettuce for a complete meal. Also good served with a side of rice, beans or black bean and corn salad. *This can be made vegetarian by removing chicken and adding black beans or more vegetables.

4 Pablano Chili Peppers

How Do I Make Grilled Chile Rellenos?

Here is how you make Grilled Chile Rellenos:

Season chicken to your taste (mexican flavors) and cook chicken breast in skillet with chicken broth (you can pan sear with oil first if you like), chop into small piceces or shred. Put back in skillet with mushrooms and onions, once cooked remove from heat and add half and half. Cut peppers in half to make a boat shape. Stuff peppers with chicken mixture and top with cheese. Grill for about 10 minutes until cheese is melted and pepper has softened. Shred lettuce and place on a plate, place pepper on top, top with salsa verde. Variations: You could substitute ground hamburger meat for the chicken. I add chopped jalapenos or serranos to the mixture to make spicy.
