1 small can cream of mushroom soup
1-2 T Daisy light sour cream
1/2 - 1 cup shredded mozerella cheese
1 large can (about 2 cups) refried beans
1 package multi grain tortillas (10 cnt)


How Do I Make Mom's Mexican Cassarole?

Here is how you make Mom's Mexican Cassarole:

Preheat oven to 350 degrees.Cook pork chops in a skillet. Blot off any excess grease. Cut into cubes.Pour about 1/4 cup or so of the Enchilada sauce into a 9"x13" baking dish. Pour 1 package or rice on top of this making certain to spread out evenly.Mix together in a small bowl the cream of mushroom soup and sour cream until blended.On each of the tortillas, spread a little of the soup/sour cream mixture, 1-2 tsp of enchildada sauce, pork, and then top with about a Tbsp of beans. Roll up and place with seam side down into the prepared dish.When all are filled, spread remaining sauce on top.Bake for 30 minutes. Sprinkle cheese on top.
