Delicious alternative to tortillas. Put some in a pita for my son-he loved it!!! Very versatile meal that can be switched up to accomadate caloric count & carb count by eliminating rice or switching to stuffed pitas, delicious!! 8 oz pck shredded cheddar
1 cup brown rice
1 tbls chili powder
1 tbls garlic powder
4 cups lettuce
1 tbls olive oil


How Do I Make Mexi-chix Salad?

Here is how you make Mexi-chix Salad:

Brown chicken breasts in oil. Prepare brown rice while chicken is browning. Add 2 or 3 tbls of water and cover chicken with lid and simmer for 20 min or so. Should be tender. Remove chicken from pan and let cool some. Cut chicken into small pieces and return to pan. Brown chicken a little more and add salsa and spices.
