The ingredients for Salsa con Carne are:1 pound of beef or pork Cut into 1 - 1 11/2 in cubes
or shrimp shelled and de-vein or defrost if using raw frozen
2 -3 large squash, zuchinni or egglant (whatever is on hand)
1 Can Rotel (or generic) tomatoes and green chilies
1 6oz can of tomato Paste
1/2 c Chicken broth (if using shrimp)
Egg noodles, rice or tortillas (your preference)
How Do I Make Salsa con Carne?
Here is how you make Salsa con Carne:Cut meat into 1 - 1 1/2 inch cubes & brown in a skillet on all sides Set aside ** If using shrimp see bottom of recipecube whatever veggies you've decided on (squash, egg plant, zuchinni etc) and saute in the skillet until just tender and set aside.add browned meat, Rotel and tomato paste in a pot or deep skillet.Let meat mixture simmer and reduce for about 30 minutes, then add sauted veggies continue simmering for 10 minutes. Salt & pepper to taste. **If using shrimp shell and de-vein or defrost if using raw frozen; do not brownAdd half a cup of chicken broth to the Rotel and tomato paste, let simmer and reduce for 30 minutes while sauteing veggies. Add shrimp and sauted veggies to the mixture and simmer on low for 10 minutes.
