1 tablespoon vinegar
2 tablespoon Anejo tequila
1 tablespoon lime juice
1 crushed garlic clove
1 teaspoon granulated sugar ***
1 tablespoon chili powder + extra for sprinkling
2 tsp onion powder + extra for sprinkling

Here is how you make Tequila Chipotle Salsa:

Preheat oven to 450Mix salt, pepper, sugar and olive oil in a medium to large casserole pan. Chop the tomatoes into quarters and toss in the oil. Then place in oven for 10 minutes. After 10 minutes take out and stir. Add green peppers and sprinkle the chili powder and onion powder on top. Then place back in the oven for another 10 minutes. Afterward using a colander separate out as much liquid as possible. (Save liquid for something else. It will make great Spanish rice) Chop onion into quarters, place on baking sheet or piece of tinfoil, place under broiler. Cook until they are on the border between brown and burned. Then add everything into a food processor (the tomatoes, the liquid, the onion and all the spices) and combine. ***No calorie sweetener dosen't work I've tried it. The sugar brings out the natural sweetness of the tomatoes. No calories sweetener makes the whole batch taste weird. You're better off just leaving it out if you're concerned about it.
